If you like Pina Coladas, and getting caught in the rain. If you´re not into yoga, if you have half a brain… you’re gonna love this drink. Actually, even if you hate the rain, and love yoga, you’re going to love this Watermelon Pina Colada!
It’s pretty much the perfect summer drink. It’s perfect for kids and adults. Kids can have the virgin version, and adults can add rum!!
-1 small watermelon
-1 cup coconut milk
-2 tbsp coconut creme
-1 cup pineapple chunks
-3 kiwi fruits (optional)
I don’t like my drinks watered down, so instead of using ice cubes in this drink, I pureed the watermelon, and froze it in ice cube trays.
Pour the coconut milk, pineapple, coconut cream, frozen watermelon, and rum (if you’d like) in your blender. Blend until smooth, but still frozen. Pour into a glass.
You can serve your Watermelon Pina Colada as is, or if you’d like to get FANCY you can layer it as I did.
To make the white layer, I froze half a cup of coconut milk, and a teaspoon of coconut cream in an ice cube tray. I then blended those cubes up, with another splash of coconut milk (to make it creamier) and layered that on top with a spoon.
The green layer is just pureed kiwi. It adds a little sweet & sour flavor to this drink, and it looks really cool!
Garnish with a little slice of watermelon or other fruit, and serve!
