I have a picky eater. Scratch that. She’s not really picky, she’s particular. Avery enjoys most foods as long as its on her terms. Banana? Yes, she’ll eat it, but don’t you dare cut it up! Blueberry waffle? Frozen please! Milk must be in a princess cup, and water in an octopus cup or water bottle. Sandwiches? Well, she prefers those deconstructed, and cut into shapes.
When I’m packing lunches for her I like to make them fun. Whether it’s for a picnic in the park or a day with grandma and grandpa, I want to make sure she eats instead of taking a bite and throwing the rest to the dog.
This week we planned a picnic dinner at a local park where one of our favorite children’s groups was performing. I decided to make Avery her own little sandwich kit (kind of like Lunchables) so she could make her own little mini sandwiches! It’s all about lunchbox fun!
These are perfect for school lunches, and very easy. They don’t take much longer than making a regular (not-so-fun sandwich) I grabbed our star cookie cutter and cut stars out of some delicious King’s Hawaiian bread. Then I did the same with some uncured honey ham and cheese.

You could stack them together, and make fun star shaped sandwiches but I chose to pack them separately so Avery could build her own!
I used silicone cupcake cups, but paper ones would work as well!

Avery loved them! In fact she ate every single bite, and then asked for more! This never happens, ever, so I was thrilled!

I used to make stuff like this for my son when he was younger. Now he’s old enough that a sandwich like this would make him look “uncool”. Blech. I miss the old days.

I love that they can make the sandwiches themselves. I usually make the sandwiches then cut them with the cookie cutter – this is so much more fun
