HAPPY ST. PATRICK’S DAY!!! Being of Irish descent, this may be one of my favorite holidays! I love all things green! I love shamrocks and leprechauns!! I love corned beef, carrots and potatoes (I hate cabbage!) I love craic, malarkey and shenanigans! I love it all!

This year, I TOTALLY dropped the ball!  Ive been in such a fog lately, that I even forgot that it was St. Patrick’s Day! How terrible!! We didn’t wear green, I didn’t put the corned beef in the crock pot, I didn’t set a leprechaun trap, I didn’t even watch my annual viewing of “Darby O’Gill and the Little People” (that banshee still gives me nightmares!)

I went to the store today in hopes of finding something green and Irish-ish for dessert. You know what I found? Nothing. Nada. Sold out. There were plenty of Easter bunny cookies and pastel frosted cupcakes, but not a four leaf clover in sight. Rather than run all over the state in search of a shamrockin’ dessert I thought of making a stop at  that local fast food establishment that has that seasonal shake, you know the one…it’s very, very green, and very very bad for you.

Then I said to myself, “Self, those are really gross. You’re trying to be a bit better about what you eat, do you really want to fill yourself up with all the green food coloring and unnatural icky-ness?”  My answer was “Well, no, not really!”

I went home and made myself a MUCH better shake!  Using Turkey Hill’s All Natural Vanilla Bean Ice Cream!

Have you tried it?  If not, you should!  It’s so, so good! And only 5 ingredients!  That’s right FIVE!!  CREAM, NONFAT MILK, SUGAR, VANILLA, VANILLA BEAN. It’s all natural and contains no yucky additives! So I felt better about having this treat!

To give it the minty flavor I was looking for I added in some mint chocolates! You can also add a bit of peppermint extract if you’re looking for a stronger mint flavor.  Turkey Hill also offers an  All Natural Mint Chocolate Chip ice cream that you could use! (I had Vanilla on hand!)

It was delicious!

2 cups of Turkey Hill All Natural Vanilla Bean Ice Cream
1 cup of milk
6 pieces of mint chocolate candy (I used Andes Mints)
1/4 tsp natural mint extract. Use more or less to taste (optional)

You could also add all natural green food coloring, to make it more festive!

Grown-ups could add other things as well. 😉

Combine everything in a blender, pour into your favorite pint glass, top with chocolate shavings if you’re feeling fancy, and ENJOY!

Makes about 3 servings–depending on how big of a shake you want!

That looks absolutely delicious! I’m thinking it could be pastel for Easter, red/white/blue for Memorial Day and the 4th of July (different batches of course because purple for a national holiday is just wrong), etc. I’ll have to keep this recipe close at hand. Thanks!

It definitely hit the spot! It’s still ice cream, so it isn’t a “health food” haha but, it’s nice to know that it’s all natural!!
