Growing up, my mom was always coming up with fun and delicious snack ideas. She made elaborate fruit salads, snack mixes, and one of my favorites; cottage cheese cones (Cottage cheese scooped into an ice cream cone) It was (and still is) the only way I’d eat it! (Don’t knock it til ya try it!) Another favorite snack was a mix of Rice Krispies, raisins, and peanut butter. She’d make it for me and I’d grab it from the fridge when I got home from school and dig in with a spoon. It’s a snack that I have continued to make for myself and now for Avery!
While shopping at Walmart this week Avery and I stumbled upon a demo for the New Reese’s spreads. I had heard about this new product and had been dying to try it, so I was thrilled to see that it was finally available at Walmart! I have a passionate love for Reese’s products, and knew that I’d fall in love with Reese’s spreads, too!
At the demo, Avery and I got to sample Reese’s spreads on fresh apples, and it was glorious! I immediately headed over to the peanut butter aisle to grab a jar! I knew that this would be perfect to use in my mom’s “famous” crispy cereal snack!
Since I was already by changing things up a bit by using the Reese’s spreads, I decided to make a few more ingredient swaps! Instead of raisins I used Craisins, and I added some shredded coconut. I also thought it would be fun to form the mixture into bite sized balls! A perfect grab-n-go snack.
It’s a simple and easy recipe! You combine the cereal, craisins and Reese’s spreads in a large bowl. You may need to use your hands to really mix it all together. Once you’ve mixed it up, you just grab a handful of the mixture and, using firm pressure, form it into a ball. You can then roll the ball in coconut if you’d like!
Stick the cereal balls in a bowl and refrigerate! When you’re hungry for a little sweet snack, you can just grab a bite (or two, or ten) These cereal bites were a hit! I loved them, Avery loved them, and Dave loved them too! They didn’t last long, in fact, they were all gone by bedtime. Thank goodness I have the ingredients for another batch!
Reese’s Spreads have the perfect combination of peanut butter and chocolate flavors, and add a little something special (and delicious) to your favorite snacks! So far we’ve spread it on apples, bananas, toast, pretzels and even animal crackers!!
- 2 cups crispy rice cereal
- 4 heaping tablespoons Rease's Spreads
- 1 cup Craisins (or raisins)
- 1 cup shredded coconut (optional--you could also use chopped nuts if you'd like)
- Combine cereal, craisins and Reese's Spreads in a large bowl.
- Mix well, using hands if needed.
- Form into balls (you'll need to use pressure--like making a snowball) If you find the mixture difficult to work with, refrigerate for 5-10 minutes.
- Roll balls in coconut (optional)
- Refrigerate, and serve cold.
