If you know me, you know I am always looking for something to celebrate! I LOVE birthdays and holidays, and think every day is the perfect day for a party! Fall and Winter are filled with holidays, and Spring is our “Birthday Season” but in the summer, after the 4th of July, the holidays fizzle out. So this week I decided to throw a little shin-dig in our back-yard. But what would be celebrate?
Christmas in July of course!
A summer party just isn’t complete without a few adult beverages. Let me be honest, since Avery came into our lives I rarely drink, but there is just something about an ice cold beer while cooking out, and hanging outside in the summer! I’m especially fond of refreshing shandy and apple ales!
On our way home from our 4th of July celebrations last weekend, we made a quick stop at Price Chopper for our weekly groceries, and I happened to see Leinenkugel’s Summer Shandy and I knew it would be perfect for a recipe I had planned! I also picked up a 6-pack of Redd’s Green Apple Ale because, YUM! So what was the recipe I had planned?? Grilled Shrimp Kabobs with Shandy Marinade!!!
- 10-15 Shrimp, peeled and deveined (You can use fresh or frozen, tails on or off)
- 1 Bottle Leinenkugel's Summer Shandy
- 1 Lemon, quartered
- ½ Cup Olive Oil
- 3-4 Cloves of garlic, minced.
- 1 Tbsp Salt
- 1 Tbsp Pepper
- 2 Tbsp Cajun Seasoning
- Vegetables like peppers, onions, squash.
- In a large bowl, combine Shandy, oil, garlic, salt, pepper and cajun seasoning. Mix well.
- Squeeze juice from the lemon into the mixture, and put the lemon rinds into the bowl as well.
- Add shrimp and mix.
- Let marinate for 30 minutes.
- Add veggies and shrimp to your skewers (If using wood skewers make sure to soak them overnight!)
- Grill over medium heat for about 2-4 minutes, each side, or until shrimp is opaque.
While at Price Chopper, we had also picked up a pack of Ball Park Park’s Finest franks! These are definitely our favorite hotdogs. They have such a great flavor and are free of artificial preservatives, nitrites and nitrates!!I left the grilling to Dave (Because I’m terrified to light our grill…seriously.) while I got to work on my next brilliant recipe idea! Of course, Dave rocked the grill, and the shrimp kabobs were perfect! We served them over a bed of riced cauliflower, and paired them with an ice cold Summer Shandy!! While thinking of ideas for what to serve at a Christmas in July cookout, it hit me. CIDER!! At winter holiday parties, and in winter in general, hot cider is always my favorite drink. So, I thought what a better way to make this party festive, than with a twist on a traditional holiday drink! Apple Ale Slush is simple to make!
I froze the Redd’s Apple Ale in ice cube trays. Once frozen, I popped the cubes out and crushed them up in the blender until it was the right, slushy consistency. I poured them into mugs, and served them right away. You can alter this recipe to make it all your own. Add cinnamon, or nutmeg, Maybe mix in sparkling water, or ginger ale, or even juice (apple or cranberry!) To round out our party fare, I served pretzels and salad, in sand pails (Because it IS summer, after all!) and we had red and green jello for dessert.
