It finally feels like summer here in New England! After months of rain and cold, we’re finally seeing some sunshine and HEAT!! And with this improvement in the weather comes my desire to get out of the house, and spend time doing fun, outdoorsy things with my family! That means I don’t want to spend a ton of time in the kitchen cooking all our meals (Because summer also means I have a kid home with me 24/7 and that girl is always hungry!)
In the spring and summer I try to use as many fresh veggies in our meals as possible. One of my favorite fresh vegetables is zucchini! I love zucchini any way you cook it. Steamed, fried, baked, whatever! One of my favorite zucchini recipes is Italian Stuffed Zucchini boats! They are delicious, filling, and really easy to make!
I happened to find a new product from Uncle Ben’s® that makes this recipe even easier and full of flavor!

For my recipe I opted for the Parmesan & Butter flavor. I thought it would be perfect for the Italian Stuffed Zucchini!
So, when I said this recipe was easy I meant it! You only need 4 ingredients!
-6 large Zucchini
-14.5 oz can Tomatoes (You could also use fresh)
-½ lb Ground Beef
-Uncle Ben’s® Flavor Infusions Parmesan & Butter –
First, you will brown your ground beef, and then set it aside. Mix the tomatoes into the ground beef.
Next, prepare your Uncle Ben’s® Flavor Infusions according to the directions on the packaging.
While your rice is cooking, you can prepare the zucchini. Cut off the ends, and slice lengthwise.
Using a spoon, scoop out the seeds and put in the bowl with your ground beef. Place zucchini boats in a baking pan.
When the rice is done, add it to the bowl with the beef, tomatoes, and zucchini and mix together.
Now it’s time to fill those zucchini boats!!
Fill your zucchini up! Overflow those babies! Then you can add a bit of cheese on the top (I used fresh mozzarella)
Put them in the oven at 350* for about 20 minutes, or until zucchini is tender. (Note- If you like your zucchini to be more tender, you can pre-cook it. Just put about an inch of water in the pan, and bake, covered with foil, at 350 for 10-20 minutes)
They are so yummy! Even my picky 5 year old walked in and said “Whoa! Those smell really good!” and ate a whole zucchini boat!

This was absolutely delicious! We grow zucchinis so will make this over & over. We used italian style cut tomatoes & cooked the rice as a side dish instead of combining in on the “boat”
