Grilled Tilapia with Mango Salsa

We’ve been trying to eat healthier foods this year.  Trying to lose a bit of weight, but also set a good example for Avery (I will say I don’t think there is ANYTHING wrong with pizza, or take-out or fast food once in awhile.) The problem is, we’ve kind of gotten stuck in a rut, eating the same thing week after week.  Steamed veggies with grilled chicken breast, turkey tacos (I do mine without any seasoning or sour cream; just turkey and veggies) turkey burgers on whole wheat buns….It’s getting boring.  So, I’m trying to make one new thing each week so we don’t get tired of what we’re eating, give up, and drive to Wendy’s.

This week I made Grilled Tilapia with Mango Salsa.  grilled tilapia mango salsa

Dave seemed to really enjoy it, though I think he was just thrilled that I cooked something with lots of peppers!

Grilled Tilapia with Mango Salsa

Ingredients
  • Marinade:
  • ½ cup olive oil (extra virgin)
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • Salsa:
  • 1 large mango, peeled, pitted & diced
  • ½ red bell pepper, diced
  • 1 tablespoon chopped fresh cilantro (or more, if you really like cilantro!)
  • 1 jalapeno pepper, finely diced
  • ½ lime
  • ½ lemon
  • 2 tablespoons of red onion, minced
  • salt and pepper to taste
Instructions
  1. Marinade: Mix oil, lemon juice, parsely, garlic, salt and pepper together and pour into a resealable plastic bag. Add the tilapia filets, and seal. Marinate, refrigerated for an hour or more.
  2. Salsa: Combine the mango, peppers, onion, and cilantro in a bowl. Squeeze in lemon and lime juice, and mix well. Season to taste with salt and pepper, and refrigerate until ready to serve.
  3. Tilapia: Preheat grill to medium-high heat,. Lightly oil grate or use a grill topper/pan/basket. Remove tilapia from marinade and discard remaining marinade. Grill until the filets are white (no translucency in the middle) and flaky. (3-4 minutes/side depending on the thickness.)
  4. Serve the tilapia topped with mango salsa.

    I hear you about getting bored with the meals you cook at home. This looks awesome! I am definitely going to try it. Brian’s not a fan of fish, so I’ll just have to whip up something easy for him that night. :)
